INGREDIENTS:
1. 4 cups diced tomatoes
2. 3/4 cup finely diced red onion
3. 1/4 cup red-wine vinegar
4. 1 jalapeno, seeded and minced
5. 1/2 cup chopped fresh cilantro
6. 1/2 teaspoon salt
7. 1 pinch cayenne pepper, or to taste
COOKING DIRECTIONS:
1. Combine tomatoes, onion, vinegar, jalapeno, cilantro, salt and cayenne in a medium bowl. Refrigerate until ready to serve.
Yield: 10 servings
